HORSERADISH
Horseradish is a perennial plant that can grow as high as 5 feet tall. It is mainly cultivated for its large white, tapering root, although the leaves are also edible. The root is used as a vegetable or it can be ground up and blended with cream called horseradish sauce. Horseradish sauce is often served with roast beef, but is also used in a number of other dishes.
Molecular Biologists have found an enzyme in horseradish used in antibody amplification and detection. Nutritionally it contains potassium, calcium, magnesium and phosphorus, as well as volatile oils, such as mustard oil, which is antibiotic. Fresh, the plant contains 100 g of vitamin C.
